By reinterpreting traditional Japanese fermentation techniques in a European context, Nuu is developing a resilient local supply chain that is independent of industrial processes and adapted to climate challenges thanks to low energy consumption, long natural preservation, and zero organic waste management.

Nuu is an artisan workshop based in Brussels that produces miso and shoyu using a slow, traditional method that combines Japanese fermentation techniques with local ingredients. Each batch is carefully aged in wooden wine barrels to reveal a deep and vibrant flavor profile.
